Coffee Story
This coffee lot is grown by Yiver Vargas and her family at Finca Santa Lucia in Colombia, where the average temperature is 20.5°C and there is a significant day–night temperature variation. Thanks to the farm’s microclimate, the conditions are perfect for producing this sweet and characterful Bourbon.
Purchasing this coffee not only means enjoying an excellent cup profile, but also supporting a leader in gender equality and promoting sustainable farming systems. Producer Yiver Vargas is the head of the International Women’s Coffee Alliance (IWCA), where she helps women coffee growers not only improve their agricultural practices but also advance the long-standing fight for equality.
The Variety
Pink Bourbon is a rare and highly valued Arabica coffee variety, known for its pink-colored cherries and complex, refined cup profile. Originally discovered in the Huila region of Colombia, it was once thought to be a hybrid between Red and Yellow Bourbon. However, genetic studies conducted in 2017 and 2023 revealed that it is, in fact, a variety native to Ethiopia.
In the cup, Pink Bourbon stands out for its bright acidity, delicate floral notes, and fruit-forward character, with possible aromas of jasmine, citrus, red fruits, and stone fruits, depending on the terroir and processing method. These attributes have made it one of the most awarded coffees in tasting competitions and a favorite among specialty coffee roasters.
From an agronomic perspective, it presents certain challenges: it is less resistant to diseases such as coffee leaf rust and can show morphological variability among plants. Despite this, its outstanding cup potential makes it highly sought-after by producers aiming to distinguish themselves in the high-quality market.
To fully express its aromatic qualities, Pink Bourbon requires specific conditions: high altitudes (between 1,700 and 2,200 meters), nutrient-rich volcanic soils, moderate temperatures, and well-defined dry seasons. While its name is somewhat misleading, “Pink Bourbon” has become a symbolic reference for innovation, uniqueness, and quality in the specialty coffee world. Its unique taste and fascinating story make it a particularly coveted variety.
