THE ROASTERY

 

Cortinovis Coffee Roasters grew out of a journey that began long before we started roasting coffee.

For years, coffee has been part of our daily work at our family business in Milan. Serving it every day gradually led us to look deeper into what was behind each cup: where the coffee came from, how it was grown and processed, and how roasting could shape its character.

In 2023, that journey became Cortinovis Coffee Roasters, our project entirely dedicated to specialty coffee.

Today, we select coffees with a strong focus on quality, provenance and the way they are produced. We are particularly interested in working with farmers who care for their land through regenerative practices, polyculture and approaches that protect soil health and biodiversity.

At the roastery, every coffee is treated individually. We develop a dedicated roast profile for each lot, working with its origin, variety, processing method and sensory character rather than applying a single roasting style to every coffee.

Our goal is simple: to bring out sweetness, balance and clarity while preserving what makes each coffee distinctive.

We roast in small batches on our Diedrich DR-12, combining precise control of the roasting process with continuous tasting and evaluation. Profiles are tested, adjusted and refined in the cup, because for us roasting is not about imposing a flavour on a coffee, but about finding the best way to express what is already there.

 

INFRARED ROASTING

Our Diedrich DR-12 uses finely tuned infrared burners to manage heat throughout the roast. Combined with precise control of airflow and drum speed, they allow us to shape how energy is applied to the coffee at every stage of the roasting process.
