Coffee Story
The Chelbesa, Gedeb coffee lot is grown at an altitude of 2200 meters above sea level. The ripest cherries are carefully selected, floated, and pulped. The coffee is then dry fermented in fermentation tanks without water and dried for 10–15 days. This processing method ensures the highest coffee quality. Once dried and stored, the coffee is transported to Moplaco in Gerji, Addis Ababa, and then moved by train to Djibouti for export.
Ethiopian coffee production is deeply influenced by the country’s three main seasons. The Bega season (October–January) is the long dry period, crucial for coffee harvesting and processing. The Belg season (February–May) brings the first rains, essential for coffee flowering and early fruit development. The Krempt season (June–September) is marked by heavy rainfall, vital for the later stages of coffee fruit development and ripening. By the end of September, the rains abruptly stop, allowing coffee fruits to mature and leading to an intense harvest period by November.
Botanical Variety
The Heirloom botanical variety represents a mix of traditional and indigenous Ethiopian coffee varieties. These coffees originate from an extraordinary genetic diversity that has naturally evolved in Ethiopia’s forests. Heirloom stands out for its complex and unique aromatic profile, with floral, fruity, and spicy notes, often considered among the finest in the world.
